Speeeeed paint! I'm really starting to appreciate how relaxing it is to give myself 10-20 minutes in photoshop to fiddle around. I don't have a whole lot of time to do large or detailed works while I am in school, so this sort of thing gives me my "fix".
Illustration and ocean have been my methods of choice as well lately - albeit I find myself sketching the beachgoers more than the landscape itself.

This is made-up, and isn't any particular place, but I lived on the coast in California when I was younger, so it's a bit inspired by that. :)
